    Spirited Away and Disco are ones not mentioned already and Quicksilver is so great it is worth mentioning again.

    MailActOn
    Super Duper!
    Hazel
    Desktopple Pro (Dave Chandraratnam, you might want to check this one out--it does Spirited Away's job and more... and it's a Universal app)

    I'm throwing in:

    CLIX - "If it can be done in OS X, it can be done in CLIX - if it can't be done in CLIX, it can't be done."

    iPalette - A nifty color tool.

    jEdit - Yeah, it's cross-platform, but I've chosen it over TextMate—at least until TextMate 2.0 surfaces.

    Vienna - FOSS RSS reader

    Max - FOSS audio format converter

    Firefox
    Thunderbird (RSS and Mail)
    Adium
    Disco
    HamachiX combined with Chicken of the VNC
    HandBrake
    Mailplane
    Quinn

    I also install these on every Mac:
    Perian, Growl and NuFile (are these all a "given"?)
