I'm throwing in:
CLIX - "If it can be done in OS X, it can be done in CLIX - if it can't be done in CLIX, it can't be done."
iPalette - A nifty color tool.
jEdit - Yeah, it's cross-platform, but I've chosen it over TextMate—at least until TextMate 2.0 surfaces.
Vienna - FOSS RSS reader
Max - FOSS audio format converter
